Once upon a time
“Happy anniversary” these were Karin’s (my wife) words – nobody would have ever imagined the impact of those words and the very special surprising gift, I received from her that day. But let’s start at the very beginning of this story,
A positively tested food intolerance a couple of years ago, was my trigger for starting my own bread bakes. At that time I was armed with a breadbaking machine and different types of “ready to bake” yeast & flour mixtures (oh my goodness…) – but I was already in the mood for playing with different tastes in bread, which led me to my first own recipes. The inevitable happened – first thougts on baking that bread without a machine. But somehow, these thoughts fizzled out. Until the day, my lovely wife surprised me with a breadbaking workshop.
These couple of hours in Vienna’s very first and only wood-oven-bakery (Helumt Gragger) was a wonderful start of a long, exciting, adventerous journey, that has changed my life completely. Personal goals, inspiration, challenges and my mentors have left an indelible mark on that still ongoing journey. Starting with the first dough in my hands in Hemut Gragger’s bakery, heading to Dietmar Kappl, my personal grand master who kindled me totally, and finally ending up with open crumb patterns from Claudio Perrando.
And after numerous recipe ideas, incountable baking pictures and the 2nd place at the homebaker contest of Austria’s largest breadbaking festival Kruste & Krume (crust & crumb) – to me it was more than clear, I had to “brotokoll” that (have a look HERE to get the explanation of this play on words in English).

With my very first word on the blog – to the Austrian Food Blog Award
Even if this subtitle sounds ver) exaggerated – it really seemed to me that way.
Because about half a year and two hands full of recipes later, I was on stage with my #brotokoll and received the Austrian Food Blog Award as Newcomer of the Year 2018. Simply breadtastic!
Once you bake bread you can’t stop
Think different! There is always a way to get there! Push yourself! Get inspired! Have fun! Give it a try! Every fail will get you further! After a new recipe is just before a newer one.
This is what keeps me on track and generates this huge passion about naturally leavened bread, which I am so happy to sharing with you here at #brotokoll.
