- Coached setup of sourdough, Pasta Madre/Lievito Madre or wild yeastwater from scratch until sourdough or yeastwater are active and ready for use (duration: yeastwater approx. 4 days, sourdough approx. 10 days) and final synchronous live baking via Zoom (final baking session takes approx. 6-7 hours over 1-2 days- with breaks between the steps)
- Individual private 1:1 or individual group Zoom workshop which is tailor-made for your flours, sourdoughs and environment (room temperature)! Moreover you may choose any topic/recipe you want for this individual 2 day ride. It’s just you, me and our sourdoughs
#brotokoll Coach for advanced bakers
- Special topic or selected techniques of your choice: Open Crumb, Panettone, Ciabatta kneading, Pizza/Focaccia dough, Brioche, Pasta Madre, multiple-stage rye breads, handling of bread, bread rolls…
- Let’s go one step further: we develop together your special and unique recipe! Or we modify your favorite recipes to commercial yeast free versions (based on sourdough or wild yeast water)
- You already have your own sourdough/wild yeastwater? We will give it a strong push forward and maximize ist acitivity. At the end we will conclude the preparation with a synchronous live baking via Zoom (final baking session takes approx. 6-7 hours over 1-2 days – with breaks between the steps)
